{Gluten Free} Chocolate Chip Muffins

So I haven’t posted in a little bit – it’s because the recent stars of my meal prep have been other people’s recipes. Greek meatballs, Shredded Pork Tinga…. We’ve been eating really good over here.

But I didn’t’ want to leave you waiting for too long, so I went back through my archives and found this scrumptious muffin recipe, combined with a rant about maple syrup that I wrote but never posted! Better late than never…. Enjoy!


 

It’s been quite a while since I baked. But, my husband is sick and wanted something sweet to eat. I didn’t have any fruit but I did have a bar of 75% dark chocolate from Godiva, so what the heck – let’s make some chocolate chip muffins.

But before we get to the recipe, let’s talk about things in this world that are insane.

 

  • #1 – the price of pure maple syrup. $8 for a tiny bottle of pure maple syrup. Seriously, I’ll just go find a maple tree and start my own tap.
  • #2 – the fact that anything but pure maple syrup DOESN’T ACTUALLY CONTAIN ANY MAPLE SYRUP!

 

Ok, so there are a lot more than two crazy things in this world but these are the two that are on my mind right now.

Seriously who decided to start selling products and naming them after something not even found in the ingredients list. I’m talking to you Ms. Butterworth… That is why it’s a good idea to check your ingredient labels people! Just because it says “no high fructose corn syrup” doesn’t mean it isn’t loaded with other fake sugars. And just because it says “maple syrup” doesn’t mean that it is made from maple syrup.

Oh, and I remembered one more thing – why on earth, despite my best efforts and increasing measurements, am I physically unable to make a batch of muffins that actually fills 12 cups. Literally, never have successfully ended up with a dozen muffins. Ever. Someday though, I’ll do it. I have big dreams.



 

{ Gluten Free } Chocolate Chip Muffins

What You Need

1 ½ cup almond flour

1/3 cup coconut flour

½ tsp baking powder

Pinch of cinnamon

¼ tsp sea salt

1/3 cup protein powder

¼ cup pure honey

¼ cup pure maple syrup

1 tsp vanilla extract

¼ cup coconut oil, melted

2 eggs

2 cups chocolate chips

What to Do

Preheat oven to 350 and line a muffin tin with muffin cups.

In a small mixing bowl, whisk together all wet ingredients. In a large mixing bowl, mix all dry ingredients (except chocolate chips).  Then combine both bowls together into the larger bowl. Fold in chocolate chips.

Pour into muffin cups and bake for 25-28 minutes until a tooth pick comes out clean as a whistle!

** These muffins are thick and sticky, so they’ll take longer to bake. But it will be worth the wait. Promise.
