Vanilla Coconut Pancakes

I have the most awful habit of not eating breakfast. I am not one of those “wake up at 6am, eat breakfast and do stuff” morning people. I am the “wake up 30 minutes before I have to be at work and scramble to remember my purse when I run out the door” people. This probably has something to do with the reason why I am not hungry in the morning.  I usually don’t’ feel any hunger paints until 11:30am at the earliest. Sometimes though, they hit me HARD. I have a lot of those “I need to eat now or no one is safe,” moments.  I also have this other really awful habit though, of skipping breakfast AND lunch.  Depending on where I am or what my schedule is like, I tend to get wrapped up in whatever I am doing and don’t realize until 3 or 4 in the afternoon that I never ate lunch.

My husband is a personal trainer, a fitness expert, and a newfound nutrition enthusiast. He eats every 2 hours on the dot. I get scolded, a lot, because eating only one meal per day is probably the most non-nutritious thing you can do. I saw this article the other day on facebook that had the most common myths about weight loss. One of the myths was something about the misconception that if you eat less, you’ll lose more weight but the reality is, the more often you eat – the more chance you have to lose weight. Now, I’m not eating any certain way for weight loss. I try to stick to a gluten free diet of organic vegetables and grass fed meats because MY body feels better that way. But, it’s important to keep your metabolism moving. And for me, with IBS, it’s also important to keep food in my digestive track all the time. Empty intestines are very unhappy intestines. Those of you with IBS know what I’m talking about!

So, knowing that this is a horrible habit that I need to break – I bring breakfast food to work with me every day in an effort to force myself to eat sooner. The problem is, I hate microwaved eggs. Just yuck! I love eggs, when they are fresh out of the pan or the oven. Microwaved eggs just don’t do it for me. I end up with a container sitting on my desks for three hours with only 2 bites missing.

I decided it was time to get creative. What about pancakes? Pancakes are easy, quick and delicious. I created the recipe below to aid in my breakfast attempts. So far, we have loved them so much that they haven’t made it to the second day. This time, I have two containers left for breakfast this week so we’ll see how they hold up in the microwave. Fresh off the griddle, they are fantastic!


Vanilla Coconut Pancakes {Gluten Free}

What You Need

8 eggs

6 tbs coconut oil, melted

2 tbs coconut palm sugar

½ cup coconut flour

¼ cup arrowroot starch

½ tsp baking soda

½ tsp sea salt

3 tbs pure honey

1 scoop vanilla protein powder (you can omit, and add an additional ¼ cup coconut flour)

¼ cup chocolate chips

What To Do

Whisk together eggs, coconut oil and honey in a medium mixing bowl.  In a separate bowl, mix palm sugar, protein powder, flour, starch, baking soda and sea salt.

Once well incorporated, combine the wet ingredients and dry ingredients and mix well.

Heat a skillet or a griddle over medium heat and coat with coconut oil. Add two scoops of batter onto the pan and let sit for 3-4 minutes, until bubbling. Flip and cook for 2-3 minutes on the other side, or until a toothpick comes out clean when pushed through the center. Repeat, until you have 6 – 8 delicious coconut pancakes.

Top with pure maple syrup, ghee and fresh fruits. Yum!
