Honey Lime Pork Tenderloin Tacos

Do you ever have one of those weeks where it feels like everyone and everything are working against you?  That’s the current feels. Right now, I’m knee deep in that week. But the good news is, I have really yummy tacos to look forward to when I get home from work!  It’s the little things.

Dare I say it, these might be my best tacos yet (I’m sure I’ve said that before). I used the same marinade a couple of weeks ago when I made pork chop tacos. Boy was that a mistake! I thought I was buying pork tenderloin, turns out I bought boneless pork chops. That happens sometimes when you don’t pay enough attention. But I hate wasting food, so we just moved forward and ended up with pork chop tacos. Husband thought the tacos were good, but prefers meat of the shredded variety. I think he actually said “it’s funny that the tacos taste really good, but I ate a piece of the pork plain and it was disgusting.” Guess we know how he really feels – the pork chops without the toppings? Not good.

This week, I made sure to buy the correct meat. Woofta! I was worried about how these would turn out, but there is a subtle sweetness to the meat from the honey in the marinade and it pairs PERFECTLY with all the taco toppings. I feel like this meat would also be pretty tasty with rice and veggies in a stir fry. But right now, we’re talking about tacos.

OH, someone should try this with mango salsa!  I bet it would be delicious. I’m not allowed to bring fruit salsas into our home anymore, the family does not approve. I bought husband pineapple salsa instead of regular salsa once, and he has still not forgotten. How can anyone not like pineapple salsa? I’m just saying though, the sweetness in the meat with the sweetness in fruit salsa? I bet it’s delish.

So if you looking for a twist on some boring old “ground beef tacos,” then whip out the crockpot and buy yourself a slab o’ pork tenderloin and get after it!  And I apologize for this ridiculously long love story about tacos. Thanks for reading!


 

Honey Lime Pork Tenderloin Tacos

What You Need

1.5lb pork tenderloin

For the marinade

2 tbs olive oil

2 tsp sea salt

4 cloves garlic, minced

1 tsp chili powder

3 tbs pure honey

8 tbs lime juice

1 tbs Dijon mustard

1 tsp cumin

 

For the tacos

8 tortilla shells

Shredded lettuce

Shredded cheese

Salsa

Diced red onion

Organic sour cream

What To Do

All all marinade ingredients to a gallon size ziplock bag or large mixing bowl and mix well. Then, add the meat.

Let the meat marinate for at least 1 hour. I marinated mine for about 5. The longer it marinates, the more flavor it infuses.

Dump the entire contents of the ziplock bag into your crockpot – get all those juices!

Let the meat cook on high for 2 hours and low for 2 hours.

Remove the pork tenderloin from the crockpot and shred using two forks. (Careful, HOT!) then pour the shredded meat back into the crockpot and mix it all up so the meat sucks up the rest of the juices.

Then, assemble your tacos with whatever toppings your heart desires. #tacosarethebest
