Current obsession: all things meatballs.
Don’t get the wrong idea. I still love tacos. That love is deep. But, lately I am all about the meatballs. Stuff some veggies into a meaty ball and dip it in delicious sauce. What’s not to love? Last week we had Thai Turkey Meatballs (so good!) and of course, Greek Meatballs with Tzatzkiki sauce is always a hit.
At one point, I was obsessed with one-pot rice dishes. Same general idea, mix up the flavors, you have a new creative meal each time. Why not do that with meatballs?
Since going completely gluten free (again) at the end of February I am always trying to find new ways to eat my favorite flavors and pizza is definitely one of them. Gluten free pizza works to satisfy a quick craving, but it usually isn’t the greatest so I am all about pizza flavors without the crust! Enter… pizza meatballs with marinara dipping sauce!
1lb ground beef
1lb ground pork
¼ cup mushrooms, diced
¼ cup black olives, diced
¼ cup white onion, diced
¼ cup almond flour
½ cup pepperoni, diced
¼ cup pizza sauce (use remaining can for dipping)
1 large egg
1tbs Italian seasoning
½ tbs garlic powder
1 tsp sea salt
- Preheat oven to 400° and line a large baking sheet with aluminum foil.
- In a large bowl, mix together all ingredients.
- Form into small balls and place on the baking sheet in a nice little row.
- Bake for 20-25 minutes until meat is fully cooked.
- Warm up pizza sauce in the microwave or on the stove for dipping
Pro Meal Prep Tip: meatballs are great for meal prep. Throw 2-3 in a Tupperware, drizzle with sauce, and reheat in the microwave for a minute then enjoy! They hold their quality really well for 4-5 days.
