Beef & Vegetable Soup

When you live in Minnesota and it has been raining for what feels like forever…  you need soup.  Even though it is also 80 degrees and ridiculously humid!

And what better to pair it with than some gluten free Paleo dinner rolls?  I found a bread mix by Simple Mills, and it is definitely the best gluten free bread that I have come across (they also have delicious crackers). And, it’s super easy to make! All you need is olive oil, eggs, water and apple cider vinegar.  One box of mix gives you two flatbreads, 12 dinner rolls or one loaf of bread.  I love options!   This bread mix is crisp on the outside and soft in the middle and the perfect combination for a big ol’ bowl of soup.

I first made this Beef & Vegetable Soup a couple of months ago and forgot to post it. But, it’s been gloomy and rainy for at least a week, so I was craving some comfort food for the menu this week. Since I have such cute dinner rolls on the side, I figured it is the perfect time to share this one!

Beef & Vegetable Soup

  • Servings: 4-6
  • Difficulty: easy

Ingredients

1lb beef stew meat, cut into bite size pieces

1 bag frozen mixed vegetables (peas, carrots, beans, corn)

½ white onion, diced small

2 cloves garlic, minced

1 stalk celery, diced

1 can diced tomatoes

1 1/2 tsp each – garlic powder, onion powder, paprika, Italian seasoning, pepper, celery salt + sea salt.

1tbs worchestershire sauce

½ tbs soy sauce

6 cups beef broth

 

Directions

  1. Heat 2 tbs olive oil over medium-high heat in a large pot. Add onions, garlic and beef.
  2. When beef is about halfway cooked through, add 4 cups beef broth and bring to a boil. Let boil for about 5-10 minutes, or until beef is fully cooked.
  3. Add all remaining ingredients, let come to a boil then cover and reduce heat. Simmer for 30 minutes.
  4. Enjoy!
