This post is dedicated to two of this blog’s biggest supporters; Don + Denise.
I once posted this video on facebook with the caption “I wish someone would make this for me!”
A couple of days later, we got a text from Denise that said they were on their way over to drop off a surprise. I had no idea what it could be. A few minutes later, we got another text – the surprise was the sleeping bear rice & egg dish, Don made it for me. But, under Denise’s care the plate slid off the dashboard. The text was accompanied by a photo – a pile of rice and egg. She felt awful but I could not stop laughing and smiling. It was the one of the nicest things anyone had ever done for me. They took time out of their day to make and deliver me this meal that I had wanted; for no reason, other than kindness, thoughtfulness and generosity.
Don and Denise are two of the best people that I know with the biggest hearts. Yesterday, Denise lost her 10-year battle with cancer and my heart could not be more broken. I smile looking back at the memories of time spent with her, even though it was not enough. ❤
Last week, Don urged me to post this recipe when I put a picture of it on FB. Thank you, Don for always supporting my blog – for trying my recipes – and for sharing your own! Oh, and for all the joy & laughter you bring to my hubby! I look forward to making dinner for you very soon.
Italian Chicken Sausage Soup
Ingredients1 package Italian chicken sausage of choice, sliced (4 links – I used Gold’n Plump: Italian Cheese & Pepper sausages)
½ yellow onion, diced
3 stalks celery, diced
2 carrots, diced
1 can diced tomatoes
2 cups baby spinach
32oz beef broth
½ tbs minced garlic
2 tsp each Italian seasoning, onion powder, garlic powder, and paprika
1 tsp celery salt
Salt + pepper, to taste
Parmesean cheese, to garnish
- Heat 1 tbs olive oil over medium-high heat. Add chicken sausage, let brown for a few minutes.
- Add all other ingredients to the pot.
- Bring pot to a boil. Let the soup boil gently for approximately 10 minutes until veggies are soft.
- Cover, reduce heat and let simmer for 20 minutes to let all the flavors jive together.
- Sprinkle with parmesean and eat it up (but let it cool down first, no one likes a burnt tongue).
